Taboule Style Salad

Preparation time: 15 minutes
Cooking time: 10 minutes


Serving: 4-6 portions

  • 1 ¼ cup vegetable broth
  • ½  cup white quinoa 
  • One pinch of salt
  • 2 tomatoes, diced
  • 1 cup diced cucumbers
  • 2 green onions, sliced
  • ½ to ¾ cup freshly chopped parsley
  • 8 chopped mint leaves
  • 3 tsp. olive oil
  • 3 tsp freshly squeezed lemon juice
  • Salt and black pepper. to taste
  • 1 pack of 285g frozen shish taouk TVP from 57Vegane 

     

     

     

    Instructions :

    Rinse the quinoa, place in a saucepan with the vegetable stock and a pinch of salt. Cover. Turn the heat to medium-high. Once boiling, reduce the heat to medium-low and continue cooking, covered, until it has soaked the water. Leave to cool off the heat uncovered.

    Cut the vegetables and herbs, pour into a large salad bowl with the oil, lemon juice, salt and black pepper, as well as the shish taouk tvp. Add the cooled quinoa, mix, adjust the seasoning to taste then serve.
